STUFFED IDLI



Ingredients :


Rice (soaked in water for 8 hours) -- 1 cup
Urad daal (soaked in water for 8 hours) -- 1/2 CUP
Soda bicarb ---- a pinch.
Salt---- to taste.

FOR THE STUFFING :

Coconut (grated) --- 1/4
Sugar ------------- 1/2 cup
Almonds (chopped) -- 2tsp.
Cashewnuts (chopped) - 2tsp.
Raisins ------------- 2tsp.
Nutmeg (powdered) ---- 1/4tsp.
Cardamon (powdered) -- 1/4tsp.

METHOD : 

Grind the rice and daal seperately to a fine paste. Add the soda bicarb., salt and mix thoroughly. Melt the sugar on low flame and mix in all other fillings. Grease idli stand bowls with oil, fill half with the rice batter, spread coconut mixture (stuffing) on top, cover again with more batter nicely and steam till the idlis are well cooked. Serve hot.
