Vegetable Papa Rolls

Serves : 4

INGREDIENTS :

*Papa, medium sized ...................... 4
Carrot ( medium sized), chopped .............. 1
Potato ( medium sized), chopped .............. 1
French beans, chopped ...................... 6
Cauliflower, chopped ....... 100 gms / 1/2 cup
Salt to taste
Tomato chopped ............................. 1
Oil for frying
Turmeric (Haldi) powder ................ 1/2 tsp
Red Chilli Powder .................... 1/2 tsp
Green coriander, chopped ...... 15 gms / 1 tbs

METHOD :

* Lentil based wafer-thin snack, eaten roasted or fried - easily available at any Indian food store.


1. Boil the chopped carrot, potato, French beans and cauliflower with a pinch of salt till almost cooked. Drain water and allow vegetables to dry out.

2. Stir-fry the tomatoes in oil (1 tbs). Add boiled vegetables, along with turmeric and Chilli powder. Stir and add  coriander. Remove from the heat and allow to cool.

3. Take a Papa, dip it in water(to make it pliable), put a little vegetable mixture along the center and fold       both sides over. Press each end well to seal.

4. Heat oil till it is smoking. Deep fry Papa rolls on each side till crisp. Remove and serve immediately.
