GARLIC CHICKEN BITES


Ingredients
:


1/2 kg of boneless chicken breasts
3 table spoons of minced fresh coriander
2 teaspoons fresh groundblack pepper
1/2 cup tomato sauce
1/4 cup raisins
1 table spoon honey
6 clovers of garlic, minced

METHOD :

Cut chicken breasts into bite sized pieces, about 1 to 1 1/2 inch chunks, mix coriander black pepper and 4 clovers of garlic together. Rub into chicken pieces. Place the chicken pieces on a lightly oiled baking pan. Bake at 100 F for 10 to 12 minutes or until lightly browned and no longer pink in the center. While the chicken is baking, combine the rest of the garlic, tomato sauce, vinegar, raisins and honey in a good processor or blender. Mix just until raisins are chopped. Serve the chicken hot with the sauce. Makes about 4 servings.
