MUGHLAI LAMB CHOPS

Serves : 4-6     

INGREDIENTS :

Lamb chops, cleaned and flattened ------------- 1 kg
Papaya paste ------------------------ 60 gms / 4 tbs
Ginger paste -------------------- 50 gms / 3 1/3 tbs
Garlic paste ------------------------ 45 gms / 3 tbs
Black pepper powder ------------------ 5 gms / 1 tsp
Salt to taste
Yoghurt, drained ---------------- 80 gms / 5 1/3 cup
Green cardamoms (choti elaichi),
pounded ----------------------------- 10 gms / 2 tsp
Garam masala ------------------------ 20 gms / 4 tsp
Lemon juice --------------------- 40 gms / 2 2/3 tbs
Orange colour ------------------------------ a pinch

METHOD :

1. To the lamb chops, add papaya paste, ginger and garlic pastes, black pepper powder and salt, mix well and marinate for 2 hours.

2. Whisk yoghurt, green cardamom powder, garam masala, lemon juice and orange colour in a large bowl and coat the chops evenly with this mixture. Cover and keep aside for 1 hour.


3. Skewer chops 1" apart and roast in a preheated (175 0C / 350 0F) oven / tandoor / grill for 9-10 minutes, basting occasionally with butter.


4. Serve hot, accompanied by a salad.
