INGREDIENTS :
Chicken breast, cut into boneless cubes ----------- 1 kg
Garlic paste ---------------------------- 30 gms / 2 tbs
Ginger paste ---------------------------- 30 gms / 2 tbs
Salt to taste
White pepper powder ---------------------- 5 gms / 1 tsp
Egg, whisked ----------------------------------------- 1
Cheddar cheese, grated ------------------ 60 gms / 4 tbs
Green chillies, deseeded, finely chopped ------------- 8
Green coriander, finely chopped --------- 20 gms / 4 tsp
Mace and Nutmeg powder ----------------- 3 gms / 1/2 tsp
Cornflour ------------------------------- 10 gms / 2 tsp
Cream --------------------------------- 160 ml / 2/3 cup
Oil / Butter for basting
METHOD
:1. Rub garlic-ginger powder pastes, salt and white pepper into
the chicken cubes, keep aside for 15 minutes.
2. To the whisked egg, add cheese, green chillies, coriander, mace-nutmeg powder,
cornflour and cream. Mix well and coat the chicken cubes with prepared mixture. Marinate
for at least 3 hours.
3. Skewer the chicken cubes 2 cms apart and roast in a preheated (137 0C / 275 0F) oven /
grill/ tandoor for 5-8 minutes. Hang skewers for 3-5 minutes to let excess liquid drip,
brush with oil and roast again for 3 minutes.
4. Serve at once, garnished with chopped coriander, tomato slices and lemon wedges,
accompained by mint chutney.
