Serves 4-6
INGREDIENTS :
Chicken breasts, cut into boneless cubes - 1 kg
Lemon Juice - 15 gms / 1 tbs
Garlic Paste - 45 gms / 3 tbs
Salt to taste
Cottage cheese (*paneer), grated - 150 grams
Cream - 60 ml / 4 tbs
Cornflour - 22 gms 1 1/2 tbs
Green Chilli Paste - 10 grams / 1 tsp
White Pepper - 6 gms / 1 tsp
Green coriander, chopped - 15 gms / 1 tbs
METHOD :
1. Marinate chicken with lemon juice,
garlic paste and salt for 1 hour.
2. Mix grated cottage cheese, cream,
cornflour, chilli paste, white pepper and coriander in a bowl and whisk till smooth.
Marinate chicken in this mixture for atleast for 3 hours.
3. Skewer chicken 2 cms apart and roast in
a preheated (175 degrees. / 350 degrees) oven/ tandoor/ grill for 8-10 minutes. Baste with
butter and roast for three minutes or until golden in colour. Serve hot, garnished with
tomato, onion and cucumber slices and accompanied by mint chutney.
